Asian-style green beans with garlic and soy

Ingredients
1lb green beans, trimmed
.5bulb garlic, sliced, halved
1x shallot, sliced, halved
2tbsp avocado oil
salt
pepper
3tbsp soy sauce
1tbsp mirin
1 pinch red pepper flakes
sesame oil
sesame seeds, preferably toasted
Directions
Vigorously season 6quarts of water with salt, bring to a rolling boil. Fill a large bowl with ice and salted water.

Heat wok on medium high. Add half the avocado oil, half the beans, half the garlic, half the shallots. Sautee to heat beans through, 1-2 minutes. Set aside. Repeat with other half.
return all portions to the wok. add soy, mirin, red pepper. Reduce soy until it coats and glazes beans, about 1 minute.
Plate. Drizzle with soy, sesame oil, season with sesame seeds.
