Asian-style green beans with garlic and soy

Ingredients

  • 1lb green beans, trimmed

  • .5bulb garlic, sliced, halved

  • 1x shallot, sliced, halved

  • 2tbsp avocado oil

  • salt

  • pepper

  • 3tbsp soy sauce

  • 1tbsp mirin

  • 1 pinch red pepper flakes

  • sesame oil

  • sesame seeds, preferably toasted

Directions

  • Vigorously season 6quarts of water with salt, bring to a rolling boil. Fill a large bowl with ice and salted water.

  • {“Blanch beans”=>”boil 4-5 minutes until tender crisp. Shock in salted ice water. Dry (totally) on a towel.”}

  • Heat wok on medium high. Add half the avocado oil, half the beans, half the garlic, half the shallots. Sautee to heat beans through, 1-2 minutes. Set aside. Repeat with other half.

  • return all portions to the wok. add soy, mirin, red pepper. Reduce soy until it coats and glazes beans, about 1 minute.

  • Plate. Drizzle with soy, sesame oil, season with sesame seeds.
