Conditum Paradoxum

Ingredients

  • 750mL white wine

  • 2/3 cup honey

  • 0.5tsp ground black pepper

  • pinch of mastic powder

  • pinch of ground spikenard or bay leaf (translation unsure which)

  • pinch of ground saffron threads

  • 1 date, with its pit

Directions

  • soak the date in some of the wine, bake the pit at 350F for 15 minutes

  • stir the honey and 1/3rd cup of the wine in a saucepan at medium-low, bring to a simmer.

  • Simmer for 5 minutes, ensuring it doesn’t boil over. Remove from heat, let cool.

  • repeat previous step, then again. total 3 iterations.

  • grind date pit. Add remaining spices, and the flesh of the date (keep that wine). Mash into a paste. Stir into honey mixture, then stir in remaining wine.

  • cover, let rest overnight. Strain as best you can.
