Conditum Paradoxum

Ingredients
750mL white wine
2/3 cup honey
0.5tsp ground black pepper
pinch of mastic powder
pinch of ground spikenard or bay leaf (translation unsure which)
pinch of ground saffron threads
1 date, with its pit
Directions
soak the date in some of the wine, bake the pit at 350F for 15 minutes
stir the honey and 1/3rd cup of the wine in a saucepan at medium-low, bring to a simmer.
Simmer for 5 minutes, ensuring it doesn’t boil over. Remove from heat, let cool.
repeat previous step, then again. total 3 iterations.
grind date pit. Add remaining spices, and the flesh of the date (keep that wine). Mash into a paste. Stir into honey mixture, then stir in remaining wine.
cover, let rest overnight. Strain as best you can.
