Fried Plantains A La Ma
coconut oil and rum, rather than the original recipe which called for coconut rum
Ingredients
3x plantains
brown sugar
olive oil
coconut oil
rum*
Directions
Peel plantains, slice 1/3rd inch thick
heat oils. Melt in brown sugar, aiming for a viscosity that just barely counts as liquid.
Add plantain slices, maximizing surface to surface contact (as opposed to rolling around on their side)
fry 2 minutes, flip, fry 1 minute. Aim for uniform brown coating.
Add rum, fry 1 more minute.
