Fried Plantains A La Ma

coconut oil and rum, rather than the original recipe which called for coconut rum


  • 3x plantains

  • brown sugar

  • olive oil

  • coconut oil

  • rum*


  • Peel plantains, slice 1/3rd inch thick

  • heat oils. Melt in brown sugar, aiming for a viscosity that just barely counts as liquid.

  • Add plantain slices, maximizing surface to surface contact (as opposed to rolling around on their side)

  • fry 2 minutes, flip, fry 1 minute. Aim for uniform brown coating.

  • Add rum, fry 1 more minute.
