Jambalaya A La Ma
Ingredients
1lb chicken, diced
1lb sausage, sliced
2 ribs celery, diced
.5x bell pepper, diced
.5x onion, diced
2/3rd cup yellow rice
1.5cup chicken broth
Directions
flatten sausage into large pot. (bonus points if you can get them to stick in 1 big pancake, makes it easier to flip). Cook most of the way in its own grease. Set aside, but keep the grease.
Cook chicken in sausage grease. Meanwhile, dice sausage. When chicken is done, it can be set aside with diced sausage, but keep the grease.
Start the rice. the brand of yellow rice I usually get calls for 1:1 rice:water, but we’re intentionally doing 1:2 rice:broth
Add onions to grease, cover, stir occasionally. Cook most of the way. Add celery to onions and grease, cook most of the way. Add pepper, cook most of the way.
Add meats back to veggies and grease, finish cooking meats.
add rice to the main pot, finish boiling off the broth.
