Jambalaya A La Ma

Ingredients

  • 1lb chicken, diced

  • 1lb sausage, sliced

  • 2 ribs celery, diced

  • .5x bell pepper, diced

  • .5x onion, diced

  • 2/3rd cup yellow rice

  • 1.5cup chicken broth

Directions

  • flatten sausage into large pot. (bonus points if you can get them to stick in 1 big pancake, makes it easier to flip). Cook most of the way in its own grease. Set aside, but keep the grease.

  • Cook chicken in sausage grease. Meanwhile, dice sausage. When chicken is done, it can be set aside with diced sausage, but keep the grease.

  • Start the rice. the brand of yellow rice I usually get calls for 1:1 rice:water, but we’re intentionally doing 1:2 rice:broth

  • Add onions to grease, cover, stir occasionally. Cook most of the way. Add celery to onions and grease, cook most of the way. Add pepper, cook most of the way.

  • Add meats back to veggies and grease, finish cooking meats.

  • add rice to the main pot, finish boiling off the broth.
