Memphis Dry Rub
Ingredients
1lb rack of pork ribs
½ cup memphis rib rub
Directions
preheat broiler
remove ribs membrane
apply rub, as much as will stick
line baking tray with foil, then cooling rack on top, then ribs on rack.
broil until bubbling and sizzling - but only if there’s sugar in the rub. Just sear it.
Let the oven cool to 250F/120C.
bake 2 hours, then cover with foil (you don’t have to seal it), then cook remaining 2 hours. The rack should be limp.
