Peanut Butter Cookies

  • 1 stick butter, softened (4oz/115g)

  • 0.5cup (100g) white sugar

  • 0.5cup (115g) brown sugar

  • 1 large egg

  • 1 cup (240g) peanut butter (smooth or chunky)

  • 0.5tsp vanilla

  • 05.tsp baking soda

  • 0.5tsp salt

  • 1.5 cups (190g) all-purpose flour


  • preheat oven to 375F. beat butter in stand mixer.

  • gradually mix in sugars, blend until creamy.

  • beat in eggs, peanut butter, vanilla, baking soda, salt.

  • gradually mix in flour.

  • shape into 1-inch balls, arrange 2 inches apart. Press flat with a fork.

  • bake 5-6 minutes, switch oven racks and rotate, bake 5-6 minutes (until firm).

  • let cool on sheets for 2-3 minutes. Move to wire rack to finish cooling.
