Peanut Butter Cookies

Ingredients
1 stick butter, softened (4oz/115g)
0.5cup (100g) white sugar
0.5cup (115g) brown sugar
1 large egg
1 cup (240g) peanut butter (smooth or chunky)
0.5tsp vanilla
05.tsp baking soda
0.5tsp salt
1.5 cups (190g) all-purpose flour
Directions
preheat oven to 375F. beat butter in stand mixer.
gradually mix in sugars, blend until creamy.
beat in eggs, peanut butter, vanilla, baking soda, salt.
gradually mix in flour.
shape into 1-inch balls, arrange 2 inches apart. Press flat with a fork.
bake 5-6 minutes, switch oven racks and rotate, bake 5-6 minutes (until firm).
let cool on sheets for 2-3 minutes. Move to wire rack to finish cooling.
