Pizza crust (babish's)

  • 470g bread flour

  • 25g sugar

  • 2g yeast

  • 285g ice water

  • 9g kosher salt

  • 15mL olive oil


  • mix flour, sugar, yeast, and water until a ball of dough forms. let dough rest for 15 minutes.

  • add salt, olive oil. Knead on medium speed, 5-7 minutes.

  • place dough in oiled container, cover. Proof overnight in the fridge.

  • divide in half, store in the fridge up to a week.

  • on pizza day, let it proof at room temperature for 2 hours.
