Ingredients
470g bread flour
25g sugar
2g yeast
285g ice water
9g kosher salt
15mL olive oil
Directions
mix flour, sugar, yeast, and water until a ball of dough forms. let dough rest for 15 minutes.
add salt, olive oil. Knead on medium speed, 5-7 minutes.
place dough in oiled container, cover. Proof overnight in the fridge.
divide in half, store in the fridge up to a week.
on pizza day, let it proof at room temperature for 2 hours.
