Southwest Beef Cavatappi

  • 4tbsp smoky red pepper crema

  • 0.5 cup mexican cheese blend

  • 1 tsp hot sauce

  • t tbsp cooking oil

  • 1 tbsp butter

Directions

  • bring a pot of salted water to a boil.

  • halve, deseed, thinly slice poblano pepper. Trim and thinly slice scallions, separating whites from greens.

  • once water is boiling, add cavatappi. Cook, stirring occasionally, until al dente, 9-11 minutes.

  • reserve 1 cup of pasta water, drain the rest.

  • heat a large drizzle of oil in a medium pan. add poblano
