Ingredients
6 eggs, yolks and whites separated
3/4 cup + 6tbsp granulated sugar
1.5tsp vanilla extract
1/4tsp salt
3/4 cup all purpose flour
3/4 cup corn starch
10x sugar for dusting
Directions
preheat oven to 350F. get a big cookie sheep. Butter completely. and then (yes, over the butter) fit parchment paper along the bottom, then butter again, then lightly flour.
sift together corn starch and flour.
using a stand mixer, beat egg whites and 6tbsp of sugar untill “glossy” - should look like whipped cream - set aside.
back in the stand mixer, beat the egg yollks and slowly mix in remaining granulated sugar, vanilla, and salt. Mix until lighter in color and stiff.
fold yolks and whites together. sift in flour and corn starch, fold back together.
distribute batter on baking sheet. Bake for 20 minutes until golden brown and a cake tester comes out clean.
sift 10x sugar onto a flour sack towel. Immediately out of the oven, run a knife along the edge to release the cake, then with 1 impact drop it out onto the sugared towel. if the parchment didn’t stay in the pan, peel it now.
dust the now-top with 10x sugar, and roll in the towel.. Set aside to cool. (good time to prepare filling)
unroll, spread a thin layer of filling on the cake, re-roll. dust with a final layer of sugar. Slice with a serrated knife.
