Sponge cake

Ingredients

  • 6 eggs, yolks and whites separated

  • 3/4 cup + 6tbsp granulated sugar

  • 1.5tsp vanilla extract

  • 1/4tsp salt

  • 3/4 cup all purpose flour

  • 3/4 cup corn starch

  • 10x sugar for dusting

Directions

  • preheat oven to 350F. get a big cookie sheep. Butter completely. and then (yes, over the butter) fit parchment paper along the bottom, then butter again, then lightly flour.

  • sift together corn starch and flour.

  • using a stand mixer, beat egg whites and 6tbsp of sugar untill “glossy” - should look like whipped cream - set aside.

  • back in the stand mixer, beat the egg yollks and slowly mix in remaining granulated sugar, vanilla, and salt. Mix until lighter in color and stiff.

  • fold yolks and whites together. sift in flour and corn starch, fold back together.

  • distribute batter on baking sheet. Bake for 20 minutes until golden brown and a cake tester comes out clean.

  • sift 10x sugar onto a flour sack towel. Immediately out of the oven, run a knife along the edge to release the cake, then with 1 impact drop it out onto the sugared towel. if the parchment didn’t stay in the pan, peel it now.

  • dust the now-top with 10x sugar, and roll in the towel.. Set aside to cool. (good time to prepare filling)

  • unroll, spread a thin layer of filling on the cake, re-roll. dust with a final layer of sugar. Slice with a serrated knife.
