Sprouts Evolution

modified from mom’s recipe


  • 1lb brussels sprouts, trimmed and halved

  • .5lb bacon

  • smoked gouda, grated


  • place sprouts face-down in rimmed baking sheet. place rack on top (contact is fine). Lay bacon strips on rack.

  • bake at 400 for 25-30 minutes, until bacon is done and sprouts are browning. Remove, turn off oven, but keep closed.

  • chop bacon coarsely. Layer sprouts, bacon, and cheese in oven-safe dish.

  • return dish to (now off, still warm) oven, until cheese is melted, 20-ish minutes.
