scaling rice is not directly equal! 1.5 cups rice / 1.5 cups water 2 cups rice / 2 cups water minus 2 Tbsp 3 cups rice / 2.5 cups water 4 cups rice / 3 cups water plus 2 Tbsp

Ingredients
1.5 cups short grain rice (preferably koshihikari) (300g)
1.5 cups water (354g)
50g plain rice wine vinegar (1/4 cup)
25g sugar (2 Tbsp)
6g salt (2 tsp Diamond Crystal Kosher or 1 tsp Table salt)
Directions
wash the rice
seal in instant pot, (disable “keep warm”) hit the rice button
let it go, and let it depressurize naturally
