good rice is key - Tamaki Gold is a good brand, koshihikari is a reliable variety. quote from video: “even the most expensive rice is not that expensive (compared to meat or fish)”

scaling rice is not directly equal! 1.5 cups rice / 1.5 cups water 2 cups rice / 2 cups water minus 2 Tbsp 3 cups rice / 2.5 cups water 4 cups rice / 3 cups water plus 2 Tbsp

  • 1.5 cups short grain rice (preferably koshihikari) (300g)

  • 1.5 cups water (354g)

  • 50g plain rice wine vinegar (1/4 cup)

  • 25g sugar (2 Tbsp)

  • 6g salt (2 tsp Diamond Crystal Kosher or 1 tsp Table salt)


  • wash the rice

  • seal in instant pot, (disable “keep warm”) hit the rice button

  • let it go, and let it depressurize naturally
